Aren’t you a peach!

Here’s 1 of 2 Southern recipes inspired by that sassy city of Savannah
First up-Peach Biscuits, and on deck-Praline Fudge (coming your way tomorrow)..

GEORGIA PEACH BISCUITS

(adapted from myimperfectkitchen.com)
  • 1 1/4 Cups Flour
  • 1/4 Cup Sugar
  • 1 Tablespoon Baking Powder
  • 1/2 Teaspoon Salt
  • 6 Tablespoons Cold Butter
  • 1 1/2 Cups Fresh Diced Peaches
  • 1 Cup Dulce de Leche Coffee Creamer (or Heavy Cream, but using a coffee creamer adds way more flavor!)

Pre-heat your oven to 425 degrees, and prep a cookie sheet with either non-stick spray or your trusty Silpat.
Combine the Flour, Sugar, Salt, and Baking powder in a bowl. Throw in your butter and cut it into the dry ingredients. A pastry cutter works like a charm for this, but you can always attack it with 2 butter knives if you dont have a cutter. Cut the butter into the dry ingredients until it resembles a course meal.  Now toss in those pretty peaches. Stir it up so you coat the peaches in the floury mixture. This helps the peaches stay even throughout the dough. No one likes it when your peaches sink to the bottom. Next, stir in that coffee creamer. Dont work the dough too much, or you wont have soft biscuits, and thats depressing.

Turn the dough out onto a floured surface and sprinkle a little flour on top. Pat the dough to about 3/4 inch thickness and cut out your biscuits, then put them on your prepped pan and throw them in the oven.

Bake those peachy beauties for 15-20 minutes, or until theyre slightly  brown on the bottom oven group pic

These little darlins are tasty on their own, but I highly suggest drizzling them with some local honey while they’re still warm from the oven. Obviously, these are to be served accompanied by some sweet tea 🙂
