Cinnamon Cupcakes with Pumpkin Pie Frosting

Here’s the first of our favorite fall recipes as featured in yesterdays post.  If you love spice and pumpkins than these puppies are for you!IMG_8424DSC02439DSC02407DSC02425

Cinnamon Cupcakes with Pumpkin Pie Frosting

For the Cupcakes:

-1 box white cake mix

-1 cup water

-½ cup veggie oil

-3 eggs

-2 teaspoons cinnamon

Combine all ingredients and fill a lined cupcake pan. Bake at 325 degrees for ~20min or until toothpick comes out clean.

 

For the Pumpkin Pie Frosting:

16oz vanilla buttercream frosting

-½ cup pure pumpkin puree

-1 teaspoon cinnamon

-1 teaspoon nutmeg

-2-4 Tablespoons cornstarch

Combine all ingredients and mix on a medium speed until combined. If your frosting is too thin, add more cornstarch (or meringue powder). I used closer to 4 T to get my frosting thick enough, so adjust and add more/less according to your frostings consistency. Frost cooled cupcakes, and top with a sprinkle of pumpkin pie spice. Enjoy!
