Ahhhh, potato candy. For us Sunday’s Girls, this is one of those special treats that you only get once in a blue moon, like when a great aunt comes to visit, or theres a church potluck. For those of you who haven’t been introduced to this sweet swirl of peanuty perfection, we’re sorry, and we’re here to help you with this problem 🙂 Trust us…you’re gonna love it! We did our potato candy 2 different ways-the traditional way, and then we decided to add a little sumthin extra…Nutella. We suggest trying both versions of this recipe juusttt to make sure you aren’t missing out on anything (but our favorite is Nutella) 😉
Old Fashioned Potato Candy

1 Small Potato
2 lbs Powdered Sugar
1 Jar of Peanut Butter
1 Jar of Nutella
Peel your potato and boil until fork tender.
Drain and throw it in a large bowl and beat until smooth. Then add in your powered sugar. This step is more of a common sense thing than a measuring thing. If your potato is small, you won’t need the full 2lbs of sugar, but if its a larger potato, you’re probably gonna need it all. Your goal here is to add the powdered sugar until you end up with a dough that resembles a thick cookie dough. Our potato was small, so we used maybe 3/4 the bag of powdered sugar. Once you’ve got it all mixed up, dump it onto a powdered sugar covered table and roll it out into a 1/4″ thick rectangle.
Once your dough is rolled out into a rectangular shape, cover it in a thin layer of peanut butter.
If you’d like to the Nutella version of this recipe, this is the time to do it! I found that the Nutella is a little thicker than the peanut butter, so spread it on first, followed by the peanut butter.
After you have your peanut butter (and Nutella if wanted) spread, roll your dough up like you would a pumpkin roll, so its long and skinny. Wrap it in wax paper or saran wrap and put it in the fridge for about an hour to set.
Once your hour is up, take it out and slice it into small pieces. The final step is to enjoy!
