When we created this recipe, we wanted to pay homage to one of our favorite winter flavors- mint. To us, the sharp,smooth taste of mint brings to mind our coziest thoughts. Cold winter mornings, the feeling of sitting in front of a fire after coming in from a snow ball fight, or the feeling of cold snowflakes sticking to your face. Common sense told us that adding chocolate to our cozy mint flavor would only amplify it to a better place- a place I personally wanna be 🙂 These Winter Mint Chocolate Cookies are super family friendly and easy enough for even the smallest kitchen helper to lend a hand.
Winter Mint Chocolate Cookies
2/3 C Butter
2/3 C Shortening
1/2C Brown Sugar
4 Oz Semi Sweet Bakers Chocolate ( 56% Cacao)
1 t Vanilla
1 t Baking Soda
1 t Salt
3 C Flour
1 bag of Nestle Dark Chocolate and Mint Morsels (we used about half of a 10oz bag)
First, melt your chocolate in the microwave in 15 second intervals until totally melted. Set aside to cool. Next, cream your butters and sugars in a mixer.
Add in your melted chocolate and mix to combine. Add in the eggs and vanilla next. Then, throw in your baking soda, salt, and flour. Mix until everything is thoroughly combined. Finally, add in your mint and chocolate morsels and mix.
Drop cookies on to a greased or parchment paper lined cookie sheet and bake at 375 degrees for ~10 minutes or until dark and firm on the edges.
This recipe yields about 4 dozen of these little beauties. They can be stored in an airtight container for up to a week.
