Peppermint White Chocolate Brownies
(Brownie recipe from hummingbirdhigh.com)
5 oz bittersweet chocolate
1 C Sugar
3/4 C Flour
Your favorite white chocolate
Peppermint hard candies
-First, preheat your oven to 400 degrees and line an 8 inch pan with parchment paper. In a small pan, melt the chocolate and butter until smooth and creamy. Set aside to let cool. While your chocolate mixture is cooling, throw your eggs and sugar in a mixer and beat for a couple of minutes until light in color and fluffy. Next slowly mix in chocolate. Once chocolate is fully incorporated, add in the vanilla and mix for a few more seconds. Finally, sprinkle the salt and flour over the top of your chocolate batter. Take a spatula and gently fold the salt and flour into the batter. Don’t over mix your batter or you’ll end up with tough brownies, and that’s depressing. Its fine if your batter even has a streak or two of flour left after the folding. That just means your looking at some soft, chewy brownies 🙂 Pour the batter into your prepped pan and bake 30-40 minutes. While your brownies are cooling, melt your white chocolate in a small pan or in the microwave until smooth. Rough chop your hard candies into small pieces. Drizzle your melted chocolate over your cooled brownies and then sprinkle the pretty peppermints over the top.
So do yourself a favor and bake these soon! You’ll be the most popular person at any holiday get together, and were sure you platter will go home clean 🙂
Here’s to not over mixing your batter :),
