Mini Berry Tarts

IMG_1483Seriously guys-we’ve found it. We’ve found the epitome of fresh, Springy taste.

Theres a good chance that by now you guys have figured out that our favorite ingredient to bake with is…berries! In true Sunday’s fashion, we decide to celebrate that yesterday was the first day of Spring by baking up some cute miniature berry tarts. We went all in with these little guys and did a mixture of berries and lemon curd to achieve maximum sunny, springy taste.

Mini Berry Tarts

First up, pre-heat your oven to 375 degrees and prep your mini tart pans (I only made 6, but this recipe will make extra, so if you have more tart pans, prep ’em all!) I’m guessing you could get more like 9 tarts from the crust recipe, or one full-sized tart.
Crust Recipe: (from
1/2 Cup Granulated Sugar
1/2 Cup Brown Sugar
1 t Baking Powder
3 Cups All Purpose Flour
1 Cup Butter
1 Egg
1/2 t Vanilla
-In a bowl, stir your sugars, flour, and baking powder together. Using a pastry cutter, cut the butter into the flour mixture. Add the egg and vanilla and mix until combined. To do this, I find there’s no better tool than clean hands 🙂 Tear off chunks of dough and press in the bottom and around the sides of your pans. Press the dough thin, but be sure not press it so thin that it’s almost transparent. Set these guys aside while you prep your sugary berry filling.


4 Cups of berries. We used a mixture of raspberries, blackberries, and blueberries. But as usual, we encourage you to use whatever berry you like best! (even though everyone knows raspberries are the best:) )
1 1/2 Cups Granulated Sugar
2 T All Purpose Flour
-Toss all of your ingredients in a bowl and mix until berries are thoroughly coated.IMG_1472IMG_1545Now go ahead and fill your tiny tarts with the berry mixture. You can leave them open-faced and let those berries be the star, or cut the strips of the dough and create a cute lattice on top, or even just cut shapes (we did circles) and lay them on the berries for a cute top layer. We also went a little crazy and filled the bottom of a few of our tarts with lemon curd. We found a good lemon curd recipe on A layer of lemon curd topped with a layer of sugar berry goodness=undescribable bright, fresh, springiness. Bake these guys for about 30-45 min, or until the top and sides are a nice golden brown. Take out of the oven and let cool in the tart pans. Once theyre cool, take them out and enjoy!IMG_1480Now you know you want to try these scrumptious little guys, so go ahead and do yourself a favor and bake them soon! The crust is sweeter than most tart crusts, so paired with the tartness of the berries creates a perfect balance of wonderful. We hope you enjoy them and (if you’re luckier than us) the weather where you live is nice enough to eat them outside!
