Its finally that time of year again! Flowers are blooming, the sun is trying its hardest to shine a little warmer, pastel colors are being worn, and the best part of all…Easter! If you’re like us, you get pretty addicted to the store bought goodies during the Easter season. I’m a big fan of Cadbury eggs, while my sister favors anything involving chocolate covered marshmallows. These scones are a breath of fresh air compared to the store bought goodies. The flavorful lavender buds paired with the sweet honey forms a deliciously flaky, sweet scone that’s sure to win your family and guests over this Easter Holiday 🙂
Lavender Honey Scones

3/4 C Heavy Cream
2 T Honey
1 T Dried Lavender Buds
2 1/2 C All Purpose Flour
1 T Baking Powder
1/4 t Salt
-Preheat your oven to 400 degrees. In a small sauce pan, stir together your heavy cream, honey, and lavender buds. I gave my lavender buds a quick rough chop to ensure some good flavors would be released. Heat on medium heat for 10 minutes until your mixture gets good and steamy. Pull from the heat and let cool to room temp.
In the mean time, combine your flour, baking powder, and salt in a large bowl. Using a pastry cutter (or just a big fork), cut in your butter until mixture resembles course crumbs. Stir in your egg until fully incorporated and mixture is good and moist.
Turn dough out onto a floured surface and knead about 10-12 strokes or until your dough is pretty smooth. Pat dough into a 10×4 rectangle and cut length wise once, and then crosswise 3 times, giving you 6 scones. Feel free to cut crosswise 4 times if you like your scones to be a little smaller.
Place rectangles on a greased cookie sheet and brush tops with additional heavy cream. This will create a beautiful golden brown top. Bake for 15 minutes or until golden brown.
Remove from oven and let cool. Drizzle honey over these delicious little scones right before serving.
